Farm to Table Market Visit with ABC Kitchen’s Chef Dan

 

Roughly three times a week, ABC Kitchen makes a trip to the farmer’s market – and by a trip we mean nine or ten trips each time.  ABC Reveal is going to bring you along for the ride.  Our monthly green market trip with Dan Kluger, executive Chef of ABC Kitchen with Jean-Georges Vongerichten, is back to show you how our seasonal market selects go right from the farm to your ABC Kitchen table.

We began at 11:00 in the morning, one of those brilliant, bustling, and sun-filled New York days, and caught up with Chef Dan, whom had already been winding and weaving through the market since 9:00 a.m.

“I buy most of the produce from farmers we have established relationships with over the years,” said Chef Dan, hauling a cart stacked high with produce like something straight out of a Shel Silverstein poem.  This cart was just one of many.  We gather about ninety percent of the in-season produce used in ABC Kitchen from the Union Square green market here in Manhattan.  For each visit, ABC Kitchen sends Chef Dan and kitchen staff, as well as front of the house servers, so that the entire team might gain a holistic understanding of the cuisine we produce.  The adventure is ABC mission in motion – local, natural, and slow food all play into this process.

Today’s seasonal picks: peaches and berries.
