Aside from the fact that he is a world-renowned chef, best-selling culinary author, and New York food icon, one thing is clear about Jean-Georges Vongerichten: the man knows his way around a Greenmarket. Understandably so. Since his arrival in Manhattan in 1986, he has been a devoted Greenmarket attendee; with fresh, locally sourced ingredients at the cornerstone of his cooking. And, like the Greenmarket, Jean-Georges’ own empire has grown exponentially since his arrival 25 years ago – both have become veritable New York institutions.
ABC Kitchen, one of Jean-Georges’ latest projects, is – from a cuisine standpoint – wholly a product of the Greenmarket. Many of the dishes are and continue to be inspired by the seasonal assortment available; Jean-Georges even met ABC Kitchen executive chef Dan Kluger at the market. Reveal caught up with Jean-Georges recently, to talk his history shopping the market, its evolution, and ABC Kitchen.
