We met up with Dan Kluger, executive Chef of Jean-Georges Vongerichten’s ABC Kitchen, for our first Union Square Greenmarket visit. Despite the heat, Dan and his team moved rapidly through the market, keeping quite a pace as they rolled from vendor to vendor.
While efficiency is important to Dan, he certainly seems to be having fun. Stopping to chat with friends and acquaintances along the way, he admits he has cultivated relationships throughout his many years shopping the Greenmarket. As he has gotten to know vendors, he has been able to build trust around product, thus ensuring his produce is locally-sourced wherever possible… and therefore ABC Kitchen-approved!
This trip’s pick? Sour cherries.
As with other seasonal ingredients, ABC Kitchen usually buys sour cherries while they’re in season. For this specific trip, cherries were used in three ways:
Cherry Pizza - pizza with a creme fraiche, arugula, pico shallots and sour cherry puree
Chocolate Bread Pudding with Sour Cherries - sour cherry puree blended in bread pudding
We are certainly looking forward to our next visit with Dan and team, along with a special August trip with Jean-Georges.
